Pressure cookers use less water than boiling, so dishes are ready more quickly. Foods come to cooking temperatures more quickly thus saving energy as well as time. Cooking times can actually be reduced by as much as 70%, while cooking things thoroughly and preserving the valuable nutrients, texture, and flavor of the food.
It is especially faster at higher altitudes. Low atmospheric pressure causes water to boil at a lower temperature thus making the use of water less effective at higher altitudes.
