Why is Cotardo's Italian Restaurant the top South Jersey Italian Restaurant?   by Phillip Howard

"My foods hasn't modified in Three decades!" proclaims Aldo Cotardo, who owns Cotardo's Ristorante Italiano in Clementon.

This headline wouldn't cross the lips on the restaurateur who chases the ever-roaming spotlight of buzzwords like "hip," "novel," or "up-to-the-minute."

But Cotardo could be the antithesis of those a restaurateur. Cotardo, rather, derives his satisfaction from serving a hearty Sunday dinner to his original patrons and three generations in their descendants or from fielding compliments from previous clients - possibly traveling to soon after an out-of-state move - who gush that his foodstuff stays as persistently delicious as it ever was. No, Cotardo isn't after evaluations that tag him "trendy" or "new age." For Cotardo, cooking with all the simple recipes and techniques he's used since his 1982 opening is often a fact to market with pride.

"We cook food like Grandma utilized to make, " according to him. "We don't use microwaves, we don't use Steamers, we don't use fancy equipment cooking faster and simpler. We use common fashioned stoves."

The meal that comes off those stoves is similarly unfussy, in such a way that's suggestive of the cuisine Cotardo's parents cooked for him during a vacation in Puglia, Southern Italy. While Cotardo creates his specific recipes himself, each of them incorporate be simple marinara and relatively unadorned pasta, chicken, spinach, sun-dried tomatoes, clams and mussels of his homeland. Though he lovingly calls it "peasant food, " the chef/owner ensures its quality by insisting that this get ready his way.

"I never hired a chef inside the Many years of accomplishing business, and trained most of my cooks, " says the entrepreneur who had minimal culinary training or restaurant experience before opening his eponymous eatery. "They never cooked any place else before being employed by me, never, never, never."

The vast majority of his cooks adhere to him longer than several years; his servers generally work at the restaurant through college; with the exceptional general manager, Frank Bersani, started as being a 15-year-old dishwasher when Cotardo first opened his doors.

By fostering this cohesive atmosphere amongst his staff, Cotardo further deepens madness of an "family restaurant." They raised their son and daughter from the restaurant, resting their cradles within the counter when they were babies and encouraging them to interact with their loyal patrons after they grew older.

The financial reward for his devotion is definitely the steady stream of customers with maintained their patronage regardless of the recession. The emotional reward doesn't seem possible to explain.

"It's amazing to check out what the results are spanning a thirty-year period," he marvels.

Despite turning 58, Cotardo plans absolutely no modifications to the near future to his routine or his restaurant.
